A view inside the Vehicle Assembly Building at Kennedy Space Center in Florida, where the Saturn IB that will launch the first Skylab crew is being prepared. This was in late September 1972 and the Saturn is topped by a dummy spacecraft for checkout purposes.

Didn't the boilerplate spacecraft have a stub launch escape tower on that first SA-206 rollout to the pad?

Yes, apparently part of the LES was removed for that first rollout.
