I saw these on eBay and wasn't sure to how they became?
Did the Vostok missions have their own mission patches or was this something created after the fact much like our Mercury flight patches?

The Vostok missions did not have their own mission patches. These appear to be commemoratives based on the design of vintage Soviet znachki — collectible pins.

Maybe I will go with the pins verse the patches for time period accuracy.

This can be a tricky issue in itself without a good collecting guide. I recommend "космонавтики на значках СССР" as the definitive source for year of issuance and quantities issued (tiradzj) for each pin/badge. Some sellers have abused the word "rare" or claim a false year of issue and overcharge.
