The International Space Station added a new item to its crew pantry in February 2020: hard cheese.First launched on Northrop Grumman's Cygnus NG-13 spacecraft, the cheese was made possible by devising a new late stowage process and packaging the Wisconsin sharp cheddar, Parmesan and Fontina in a refrigerated cold bag, similar to those used for fruit and fruit and some science gear. The cheeses were sourced from Houston Dairymaids, a shop local to the Johnson Space Center, including an Old Farmdal by Columbia Cheese. The NG-16 Cygnus delivered the latest cheese selection to the space station, as noted by Expedition 65 flight engineer Thomas Pesquet on Twitter: Cold bags and freezers are usually full of scientific experiments, but this one had a pleasant surprise for us...
